8 lbs of Tomatoes

It took soooo long for the tomatoes to ripen. And then suddenly, BLAMO!, there they were. That;s 8lbs there, which is now simmering away to make spaghetti sauce which we'll partially enjoy this evening for dinner and then I think we'll jar some up too.

Not sure what we're going to do with the other 180 lbs of tomatoes that are waiting for us about there. I've already made salsa (though just enough to last for a few days), we've eaten a ton of Lemon Boy tomatoes (those came in earlier) with mozzarella, with mozzarella and onions drizzle with red wine vinegar.

What do you do with your tomatoes?

  1. Caprese grilled cheese sandwiches...French baguette, balsamic vinegar, mozzarella, basil and tomatoes pressed under a brick. It's SOOOOO good, and I don't even like tomatoes! lol
